Mint Gin Fizz

Ingredients:

  • Large bunch of fresh washed mint
  • Juice of 2 lemons
  • 100ml gin
  • 4 tablespoons of caster sugar
  • Slices of lemon and mint leaves to garnish
  • Ice cubes 

Method:

Boil 300ml of water and add the washed mint leaves.  Leave to steep for 5-10 minutes and then remove the leaves.  

 

Squeeze the lemons and add to the mint infused water.  Leave to cool. 

 

Mix the sugar and gin and pour over the ice.  Add the mint and lemon infusion and stir well.

 

Taste and adjust the lemon juice or sugar if necessary.

 

Serve chilled in long glasses.  Garnish with mint leaves and a slice of lemon.
